Here is a five minute salad that takes advantage of the summer's fresh flavors. Firm fresh sweet tomatoes and fresh basil are complemented by a simple vinaigrette made with balsamic vinegar and extra virgin olive oil. A dash of garlic and a few capers provide welcome flavor and textural contrast as well.

Ingredients
3 - 4Tomatoes Medium to Large
1/4 CupFresh Basil Leaves
2TeaspoonCapers Nonpareil in brine
1CloveGarlicFinely Minced
1TablespoonBalsamic Vinegar
2TablespoonExtra Virgin Olive Oil
SaltTo taste
Fresh Ground PepperTo Taste
Instructions
Slice the tomatoes into ¼ inch thick discs.
Mince or grate the garlic finely. Add to a small mixing bowl. Mix together with balsamic vinegar and olive oil. Season with salt and pepper. Taste and adjust as needed
Arrange the tomatoes on a serving plate. Roughly tear the basil leaves and scatter over the tomatoes.
Before serving pour the dressing over the tomatoes, and sprinkle the capers on top.
Notes
Use as much or as less of the vinaigrette as needed. Refrigerate the leftover, if any, and use within 3 days.
