Shankarpali Diamond Cuts


 This is a   popular  sweet  snack from the  Indain  sub continent.   It is  easy to make  with  ingredients available  in almost  any  kitchen.

  • 1/2 C Whole Wheat lour
  • 1 C All Purpose Flour Maida
  • 1/2 C Milk
  • 1/4 C Sugar
  • 2 Tbsp Butter
  • 1 Pinch Salt
  • Oil - For frying


  1. Warm the milk and add the sugar. Mix well until the sugar dissolves completely. Measure the flour into a bowl along with the salt. Add the milk solution to it and knead to make a stiff dough. If too hard to knead add a couple more teaspoons of milk or water, but the dough should be stiff, not soft. Let rest for 1/2 hour .
  2. Lightly coat the rolling surface and the pin with oil. Pinch out a piece of dough, roll into a ball and coat lightly with oil as well. Roll the dough out into 1/8" thick circle. Cut into strips or desired shapes.
  3. Heat a thick bottomed pan. Pour enough oil in it to fry the pieces - at least 1 inch depth. Bring it to 350° F, or jsut below smoking point. Keep the heat on medium and fry in batches, till lightly browned on both side.
  4. Remove from oil and spread on kitchen towel to drain and cool. Store in an airtight container.
