Strawberry Tart  – In A  Jiffy

Bright  read  strawberries  are  just so beautiful  . Sweet  succulent and  with a  touch of  tartness  these are perfect for  an in-between snack .  I  don’t  usually cook  strawberries    much .. why mess  with perfection ?   But  these strawberry tarts  are  an  exception . This  is a quick ,  last  minute  desert  that   is  made  with just a  couple  of  ingredients   and  to top it there  is  virtually no cleanup  afterwords .

So the last  week  we  made a  trip to the   farm   and  got  ourselves  baskets  full of  strawberries .  There  are  so many  ways  you can   use  them up .  Jams ,  tarts  ,  compotes ,   cakes …  I love  strawberry tarts , but  after a  full  day  was  in no mood  to  spend  much  time  cooking . Puff  pastry sheets are  always  there in  my fridge/freezer.   Here is  my  recipe  for  easy quick  puff pastry,  but  the  store bought one  works as  well.  Not  the  most  healthy thing  to  have ,   and  you  definitely do not   want  to be  cooking   with  them   everyday .  But  these   unassuming    sheets  of   dough  are   your  best  friend   when   it  comes  to  quick  indulgences.

Defrost the frozen puff pastry sheets . Usually   one  can leave  these  on the  counter  for  20 minutes  while  the oven is  preheating  .Preheat  the oven to 400°F (200°C).  Wash and trim the  berries  .  If  there  are any large  berries halve them . The  goal  is  to  get  them into uniform  size.   Warm  2  tablespoons of  jam    till  it  is  runny  .  I prefer strawberry  jam  but  most  any  will do  . Cut  the  sheets into 4″X4″    squares .  Poke  them all over   with  a  fork . Brush with  a little  melted  jam . Arrange the   strawberries  in the center   leaving   about  half  an inch  from the  sides .  Fold  the  sides  over  .   This  helps  to  catch the   juices   while  cooking .

Arrange  the  berries   the   way you please ,  slice  them  or  leave  them  whole .  Brush the   tops   with a  little  jam.  This   gives  the   cooked  tart  a  nice   shiny  look .   Transfer  these to  a  parchment   lined  cookie  sheet .

Bake in a preheated  oven for 20 mins .  Remove  from the  oven and  cool in pan for  5 minutes .  Serve  plain or   with a  dusting  of  powdered  sugar . How  easy was  that !!!

Easy Strawberry Tart

Cook Time: 20 minutes

Total Time: 1 hour

Yield: 4 Mini Tarts

Easy Strawberry Tart

Ingredients

Puff Pastry sheet -1
Strawberries - 1 Pint box
Strawberry Jam - 2 Tbsp (or more)
To serve
Powdered Sugar / Whipped Cream

Instructions

Thaw the puff pastry sheets . Preheat the oven to 400°F (200°C).Wash and trim the strawberries .Warm the strawberry jam till it is runny .

Cut the puff pastry sheet into squares of 4" sides .Poke the squares with a fork .

Brush with melted jam .Transfer to a baking sheet lined with parchment paper.

Arrange the berries on the pastry sheet leaving 1/2" to 1" border.Fold the sides over itself. or pinch to create a thicker border .Repeat with the remaining squares.Brush the remaining jam over the tarts .

Transfer to the preheated oven and bake for 20 minutes. Remove from the oven and cool in pan for at least 5 minutes.Transfer to the serving plate .

Serve with a dusting of powdered sugar or top with whipped cream .
