Loaded Oatmeal Cookies

A few  months back a very discerning member of the  family declared  that  if mommy cooks with raisins  she  should not  expect him to  eat  it. To give him  credit he  does  eat a variety of  veggies and  fruits.   Of course I did not  want to offend  him  by making oatmeal – raisin cookies 🙂 . Instead I made these loaded  Oatmeal  Cookies. Oatmeal raisin cookie  taken a  step further. Imagine your  favorite  granola mix in a  cookie  and  there you have  it .  It is loaded  with  dry fruits  ,chopped  nuts  and  coconut .   And  the  good  news  for  me is  – no complaints or  revolts  on the  raisin  issue – at  least  not so far !!.

Loaded Oatmeal Cookies

Here is the  recipe.   In this  version I have  used  raisins  and  dried  cranberries , but  you  can  use  any dried  fruits  you like , apricots , figs, cherries  and  currants.   As for nuts, today I had  walnuts in hand , and  that is  what  I used . But  other  good  choices  are  pecans , cashew nuts, peanuts ,  almonds  or  macadamia  nuts.  Or just add   2  cups of your  favorite  trail mix  to the   cookie  dough.

Ingredients
  

  • 1 1/2 C Rolled Oates
  • 1 1/2 C All Purpose Flour
  • 3/4 C Butter
  • 1/2 C Sugar
  • 1/2 C Brown Sugar
  • 1/2 Tsp Baking Soda
  • 1 Tsp Baking Powder
  • 1 Tsp Cinnamon
  • 1/8 Tsp Salt
  • 2 Eggs
  • 1 Tsp Vanilla Extract
  • 1 C Dry Fruits
  • 3/4 C Chopped Nuts
  • 1/2 C Shredded Coconut

Instructions
 

  • Pre-heat the oven to 375° F (190°C).
  • Sift the flour, baking soda , baking powder, salt, and cinnamon into a large mixing bowl. Add the rolled oats to the mix and stir well to combine.
  • Beat the butter until it is soft and fluffy. Add the sugar and mix till it is creamy. Add the eggs 1 by one and mix well. Scrape the sides often to avoid the butter from sticking to the sides. Beat in the vanilla.
  • Fold in the dry flour mix followed by the fruits.
  • Use an ice-cream scoop to scoop the dough and place on a cookie sheet at least 2 inches apart . Bake for 12 to 15 minutes until the bottom of the cookie begins to brown. Remove the tray from the oven and let cool for a minute. Transfer to the cooling rack and cool completely.
  • Store in a airtight container.

These  cookies  are  a  bit  soft  and  chewy towards  the  middle, with just   enough  sweetness.  A  welcome  addition  to the   snack box  and  so  easy to make !!

Pre-heat  the  oven to 375°F.

This is  a  very  easy   recipe  to make .   Have  the  eggs  and  butter  at the  room  temperature .  Pre-heat the  oven. Beat the  butter  until it is  soft  and  fluffy .  Add the  sugar  and  mix  till  it  is  uniformly mixed  together into a  creamy mixture. Beat in the  the eggs  one  by one  scraping  the  sides  often.  Beat in the vanilla.  Make sure  that  no butter  bits  are  sticking  the  sides  of  the  bowl .

Sift flour , baking soda, baking powder, salt  and  cinnamon  into a  bowl . Mix  and   add the   rolled  oats. Stir to  combine .  Measure  the  fruits  and nuts /  trail mix .   Chop the  fruits  and  nuts  if  necessary .  Add the  flour mix  to the  wet ingredients and  fold  in.   Add the   fruit  nut  mix  and  and  fold in  until all  the bits  are  covered  with the  dough.

The   dough   will be a  little  hard . Scoop  out   using an ice cream  scoop  or  tablespoons  and  place on a  cookie  sheet     at least   2  inches  apart.  Flatten  a  little   and  bake  for  12  to 15  minutes  until the  bottoms  begin to  turn  brown .

Remove  the  trey from the oven  and let  cool for  a  minute.  Remove  the  cookies   on to a cooling  rack to  cool  completely .  The  cookies  will be a  little  soft  as  you remove   from the  trey

As they cool the  cookies  hardens   a  bit , but  it    still remains  a bit  chewy.  Store in a  airtight box.
